Bushmills 16 year old single malt Irish whiskey is a fine example of what can happen when distillers strive for something different, they get something remarkable. Bushmills has taken ruby port pipes and aged some of there whiskey in these pipes giving a unique and wonderful nose, to this olive dry whiskey. Although this singlemalt whiskey has a 16 year mark on it some of the whiskeys used are upwards of 20 years old and older.

Nose: A nose unlike almost any other Irish Single malt whiskey. The oak is a clear front runner, but upon that are hints of praline, almond and citrus. The usual vanilla and sap aren't present at all, as you might expect but there are unusual hints also of roasted chestnuts and a bit of pepper. This is a truly unique Irish Whiskey.
Taste: Rich and dry from the beginning, there is a sudden arrival of the pepper that the nose warned of. The nuts and sweetness are found right after that. Finally thee is a mixed signal given that keeps your palate interested, there is almost a ripe grape and dry merlot conclusion.
Finish: The wine that concludes the taste morphs into a more recognizable port, this is joined by the vanilla that was expected, but not found in the nose, finally you are left with a bit of cocoa for dessert at the very end. A complex and remarkable Irish Whiskey. |
